Week 5 Recipe: Southwest wraps

So if you haven't heard- I love cilantro. And black beans. And cheese. And anything that requires taco seasoning. This recipe does not require taco seasoning, but it's definitely in that delicious SW family. Plus these kinds of recipes are great for using up your left overs (I had rice, black beans, and 2 half bell peppers already in my fridge. Oh and cilantro of course.)

These were really good. I did make a few changes from the recipe. First- I used shredded pork instead of chicken because I had some on hand. I used red and green belle pepper (the recipe says one or the other) and I added some onion. I sauteed my peppers and onion for a few minutes before adding everything else to it. And I did not use sour cream because I don't like it. But these turned our really good. I even have a bunch left over so I'm going to freeze the rest of the filling for later.

For those of you with picky kid eaters, Reese actually loved this one. I did hers more like a quesadilla (that is not spelled right I'm sure of it!) instead of a wrap and used my pizza cutter to make smaller bites. She even asked for more!
